Introducing 11Eleven Bistro on 36 Lowell Street, Manchester, NH

This restaurant represents Chef Dudley's passion for food which started by cooking with his mother and grandmother. Dudley says, “I came out of a successful hi-tech industry for 20+ years as Vice President of Operations for several NH start-up companies of which the last was sold to Dell Computer. At age 42 I was burnt out and retired from the hi-tech start-up world and decided to fulfill a passion - to attend culinary school. I went to Le Cordon Bleu to hone my skills in the kitchen knowing that someday I would have my ultimate dream of offering my food at my restaurant. I recently spent three weeks in Italy taking classes to further my experience from several well-known chefs in the Tuscan region and cooked with the head of the Italian Culinary Academy in Lucca. This experience further instilled my philosophy that meals should be simply prepared with currently available ingredients letting each and every flavor come through. I am pleased to finely bring my passion for cooking to the people of New Hampshire.”

To further the exceptional dining experience, Executive Chef Joseph Drift from the awards winning Saffron Bistro in Nashua, NH will be joining as the executive chef at 11Eleven Bistro. “I have worked for Joe over the last few years and his passion for cooking is equal to mine and I am so grateful that he has agreed to help me launch this restaurant”, Dudley says.

While this incredibly talented and hardworking restaurateur is young, he isn't a new kid on the block. Drift, 33, has spent more than half his life in the kitchen, starting at 14, washing dishes at the New England seafood chain Weathervane. Four months later, he was prepping food, and by age 15, he was Weathervane's youngest kitchen manager. After graduating from high school, Drift took a job at the Crowne Plaza Hotel, and that's where he said he really learned to cook. Drift received his formal training at Southern New Hampshire University's culinary program while he continued to work full time at the Crowne Plaza and doing internships in Nashua and Florida.

However, it was at the celebrated Andover (Mass.) Inn that Drift really started to make a name for himself. At the tender age of 21, he became the inn's executive chef and was cooking for prominent guests, such as the nation's 41st president, George H.W. Bush. During his tenure in Andover, Drift was the recipient of numerous awards and medals, including placing second in the Young Professional Chef Competition run by the Paris-based international gastronomic society la Chaine des Rotisseurs. After a stint at the French bistro Cassis, also in Andover, Drift struck out on his own to open Saffron Bistro in 2007.

Drift continues to receive awards for his cooking, including the Hippo Press Reader's Choice award for Best Chef in Nashua three of the last four years.

11Eleven Bistro serves bistro style food with multi-cultural influences, offering a fun twist. The menu will be a constantly evolving menu based on seasonal ingredients, locally grown when available; they feature a variety of tantalizing hand crafted appetizers, salads, entrees and desserts. They frequently offer chef specials to round out the menu and a number of the menu offerings will change about every six weeks to make use of the seasonal products available and ensure there is always something new for the patron. “We believe in hand crafting all items in house including bread products, dressings, and desserts.”, says Dudley.

The restaurant seats about 80 people with a primary dining room and offering a quieter dining room for those desiring a more intimate atmosphere.

Come and see the chefs prepare your food before your eyes in their open kitchen concept. They will be offering dinner from 4PM-close, Tuesday through Saturday nights and can accommodate private parties of about 40 people for any occasion. Menus for these occasions will be custom designed for your desires.
